Burrito Skillet



What You Need

1/2 pound ground beef
1 cup salsa
1 can kidney beans, drained
1 cup shredded cheese
6 soft taco sized tortillas
Sour cream
Green onions chopped (optional)

Make It
In a large skillet, brown the ground beef and drain
the fat. Add the salsa and beans and stir. Bring to
boil. You might need to add a little water if your
salsa is chunkier and not as juicy. Reduce heat to
med. low for about 7 minutes to soften the beans.
While that is cooking, cut the tortillas in the 1 inch
squares. Stir those in and cook for another 5
minutes until they are soft. Sprinkle the cheese on
top and cover to melt the cheese.

Serve out of the skillet. Top with sour cream and
onions.

Yum... thank you for this one. We always have lots of ground beef (because it's cheap!) and we can never think of what to do with it...
